How AI Cuts Food Waste and Improves Margins
Food waste is one of the largest cost leaks in hospitality and food service, yet it remains poorly measured and rarely owned. Globally, over one third of all food produced is wasted, costing the economy more than USD 1 trillion per year and driving up to 10 percent of global greenhouse gas emissions, according to FAO and UNEP.
In this talk, I explain how applied AI, specifically computer vision paired with operational insights, enables commercial kitchens to reduce food waste by 40 to 70 percent while strengthening margins and operational discipline. Drawing on real deployment data from hotels, contract caterers, and large scale food operators, I share what changes when waste becomes visible, measurable, and actionable on a daily basis.
The session moves beyond technology hype to focus on behaviour, leadership, and execution. AI does not replace people in the kitchen, it supports better decisions at speed, helping teams align cost control, sustainability, and performance without adding operational burden.
